I have just finished scanning all my parent's old Hong Kong photos. My father Edmund Owen always refered to the man in the uploaded photo as 'Piankoff' who in my fathers opinion was a very skilled chocolatier. My father was the bakery manager for Lane Crawford between 1928 to 1933.
