I paid a visit to the "Museum of Coastal Defence" a couple of weeks ago (well worth a visit if you can get there) and took a note of all the PLA sites. Seeing as Bonham Tower Barracks was discussed a few weeks ago, I figured I would attempt a transcription (para-phrased, trying to eliminate some of the grammatical errors) of the info here.
Commanders Residence
11 Barker Road
Central Barracks
Previously known as the Prince of Wales Barracks, it was renamed Central Barracks and has been the headquarters of the PLA HK Garrison since the handover. The main building within the barracks, Prince of Wales Building, was renamed "People's Liberation Army Forces Hong Kong Building"
Chek Chue Barracks
Located at the southern end of Stanley
Ching Yi To Barracks
Located at Justice Drive. Previously known as Queens's Lines, renamed Ching Yi To after the handover.
Western Barracks
Located at 88 Bonham Road. Previously known as Bonham Tower Barracks. Renamed after the handover.
Gun Club Hill Barracks
Original built circa 1860, named after the Jordan Road Gun Club nearby. The existing barracks were built in 1903 with a small battery inside. Since 1997, an armoured car battalion has been stationed here. The PLA HK Garrison Hospital has been built to the west of the barracks.
Kowloon East Barracks
Previously known as Osborn Barracks.
No.1a Cornwall Street
This was the former Air Commander's residence, located at the junction of Cornwall St and Devon St in Kowloon Tong.
Ngong Shuen Chau Barracks
In the early 1990's, when HMS Tamar Naval Base was closed for urban development, the Royal Navy moved their base to Stonecutter's Island. After the handover, the PLA HK Garrison established a naval base on the soiuthern coast of Stonecutters and called it Ngong Shuen Chau Barracks.
Shek Kong Barracks
Located in Kam Tin, NT.
Northern Compound of Shek Kong Barracks
Previously known as Borneo Lines. Renamed after the handover.
Southern Compound of Shek Kong Barracks
Previously known as Malaya Lines. Renamed after the handover.
San Tin Barracks
Formerly known as Cassino Lines. Located in San Tin, Yuen Long. Renamed after the handover.
Tam Mei Barracks
Located in Ngau Tam Mei in Yuen Long.
(incidentally, the Ghurka Cemetery is located about half way between San Tin and Tam Mei Barracks)
Gallipoli Lines
Located on the north side of Sha Tau Kok Road in Fanling.
San Wai/Tai Ling Range
Located in the north-western part of Gallipoli Lines, Fanling.
Tai O Barracks
Located at Shek Tsai Po and formerly known as Naval Coastal Observation Station, Tai O. Renamed after the handover.
Joint Movement Unit, Chek Lap Kok
Located at HKIA.

Yes, the museum is free on Wednesdays, but consqequently full of screaming school groups and others. Better to spend the $10 and have a quiter visit (and support the museum) in my opinion.
