I don't know if the records are available, but a roundabout way may be to follow the reports in the newspapers. Gillian Bickley has a book "A Magistrate's Court in Nineteenth Century Hong Kong", and the writeup says:
... the second [part] is devoted to transcriptions of selected accounts published in the China Mail of judgments delivered by Frederick Stewart.
