Notes from Ruby's son, Henry Ching:
Ruby Irene Kong, born North Sydney 10th September 1899. On her birth certificate her father is named as Ah Kong, a grocer, and her mother Ah You. Her father’s name was actually Kam Kong (Kam being the surname) but in Australia he was known as Arthur Kong and Kong became the family surname. Little is known of her mother, except that she is buried somewhere in the Chinese Christian Cemetery in Pokfulam. Her parents are said to have married in Sydney on 16th November, 1888, but I have failed to find any record of this in the BDM Registry there.
Ruby married Henry Ching in St John’s Cathedral in Hong Kong on 25th September, 1926, having arrived in Hong Kong from Australia in 1917. She was, at the time of her marriage, employed in the Bank of East Asia.
They had five children, three girls and two boys, all born in Hong Kong. Some time in (I think) the early 1950s she was appointed an Unofficial Justice of the Peace. She died in Sydney on 12th January, 1984.
