Leung Choy was the senior Chinese baker working for the Royal Army Service Corps in Hong Kong in the years leading up to the war and during the hostilities.
He spoke good English, and Staff-Sergeant Patrick Sheridan, the RASC master baker, frequently praises his work and his personal qualities. In the period after the surrender, he provided Sheridan with information that helped him to make a successful escape from Hong Kong.
