My great grandfather sailed on the Blue Funnel Lines' S.S. Orestes in early 1900. He was the chief steward on this freighter when they departed Liverpool on Jan. 9, 1900.
His trip took him to Port Said, Singapore, Hong Kong, Shanghai, Nagasaki, Moji, Kobe, Yokohama, then back to Kobe, Shanghai, Amoy, and Hong Kong.
He died while in Hong Kong Habour on March 25, 1900.
I'm interested in finding out if anybody knows if there are Marine Museums in any of the above Ports of Call and if there are, if there is any contact information for reaching out to them.
As Chief Steward, my great grandfather may have been in some photos that may have been taken in these ports, as he was responsible of purchasing food and getting it back on board. There may be a photo of him by his ship. Its a small chance, but one I'm willing to track down.

You mention that your great grandfather died in Hong Kong Harbour in 1900. Presumably he is buried here? If you provide his full name, it would be possible to check cemetery records for his grave.

The Ship Orestes
You can try the Liverpool Maritime Museum as it was the home port of the Orestes. The ship by the way was the 3rd of that name built in 1894 and scrapped in 1925 that belonged to Alfred Holts Blue Funnel Line.
