Please can you tell us any more about his family? The name Stainfield appears on several pages (https://gwulo.com/search/node/stainfield), so it'll be good to know if they are his relatives.
He married Julia Maud Barry and had 3 children - Margery (born 1917), Regan Barry (1920 - 2001), and Evelyn Maude (born 1922).
He was my great great uncle; his siblings were
Edward Langham Stainfield
Emma Stainfield (1868 - 1937) my great grandmother
George William Walter Stainfield (1871 - 1941)
Francis (1873 - 1939)
Minnie (1880 - ...)
Lucy (1882 - ...)
Anne Elizabeth (1885 - 1936)
I would be very pleased to hear from anyone who has further information about any of the family, particularly about Edward Langham, Minnie or Lucy. I don't know when Sarah and George arrived in Hong Kong, but Emma was born there in 1868, so it was before then. George was a soldier when they married in Portsmouth in 1864, but I don't know what took them to Hong Kong. He may have been a hotel keeper and an undertaker in Hong Kong. George left Hong Kong some time between 1885 and 1890; he married again in Australia in 1890. Sarah remained in Hong Kong and died there in 1889.
