He is mentioned a couple of times in Sherdian's memoirs from 1941-2:

  • 23 Dec 1941: Hammond and the other four were brought into the Café Wiseman where the situation was explained to them. We were then treated to some much needed breakfast by the Café Manager, a Greek named Patara.
     
  • 16 Jan - 7 Feb 1942: We have a bit of a concert one night before they are due to leave, also a meal in the Café Wiseman. Patara the Greek and his Chinese cooks turn out a splendid meal….

I have some information here:

Manager at Café Wiseman, Sotirios Pantazi Pattara(s), born in the Greek city of Volos received his Commonwealth naturalization certificate in August 1952. Despite this fact, he did not abandon his Greek heritage; when an earthquake hit the Ionian Islands in 1953, Pattara(s) collected and dispatched financial help to Greece
